Chili
A cozy chili for cold months.
1 pot of chili - about 4 or 5 meals - 1 hour
Ingredients
- 1 lb ground turkey
- 2 tbsp olive oil or other oil
- 2 cans kidney beans, keep the liquid
- 1 can white beans of any type, drain the liquid
- 3 cloves of garlic
- 1 can crushed tomatoes
- 1 large onion
- 1 tbsp tomato paste
- 1 tbsp cocoa powder
- 1 shot of espresso
- 1 bottle of guinness
- 1/4 cup brown sugar
- 1 Serrano or 2 jalapeno peppers, chopped, discard seeds if desired
- 1 tbsp chile powder
- 2 tsp paprika
- 11/2 tbsp cumin
- 1 1/2 tsp coriander
- 1 tsp cayenne pepper
- 1 tsp salt, to taste
- 2 bay leaves
- limes for garnish
- chips or anything crunchy to serve with
Recipe
- Saute the veg and turkey: Heat a skillet on medium-high heat. Once hot, saute onions, garlic, and turkey with the oil until turkey is lightly browned and split up.
- Add the liquids: Pour the whole beer into the pot, along with the tomatoes coffee, and tomato paste.
- Add seasoning: Add the brown sugar, chile powders, cocoa powder, cumin, coriander, salt, cayenne, and the red kidney beans. Reduce heat to low and simmar for an hour.
- Finish it up: Add the white beans to the pot and simmer for as long as time allows. Adjust seasoning as needed. This dish is great with some cheese, limes, and something crunchy–like chips!
