Waffles

Sometimes the waffle craving strikes.

Ingredients

  • 2 1/4 cups all-purpose flour (10.4 oz / 292g)
  • 1 tablespoon baking powder
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda (optional)
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 4 oz (1/2 stick) butter, melted, or 1/2 cup neutral oil
  • 2 cups milk
  • 1 teaspoon vanilla extract

Recipe

  • Combine the dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, granulated sugar, salt, ground cinnamon, and baking soda (if using).
  • Combine the wet ingredients: In a medium bowl or large liquid measuring cup, whisk together the eggs, butter / oil, milk, and vanilla extract.
  • Preheat the waffle iron: Follow the manufacturers instructions to preheat the iron.
  • Mix the dry and wet ingredients together: Gradually add the wet ingredients to the dry, whisking until just combined.
  • Cook the waffles: Add just under 1 cup of batter to the ungreased waffle pan (if nonstick). Flip the waffle and cook for 4 minutes or until golden brown. Serve warm.
