Waffles

Ingredients
- 2 1/4 cups all-purpose flour (10.4 oz / 292g)
- 1 tablespoon baking powder
- 3 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda (optional)
- 1 teaspoon ground cinnamon
- 2 large eggs
- 4 oz (1/2 stick) butter, melted, or 1/2 cup neutral oil
- 2 cups milk
- 1 teaspoon vanilla extract
Recipe
- Combine the dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, granulated sugar, salt, ground cinnamon, and baking soda (if using).
- Combine the wet ingredients: In a medium bowl or large liquid measuring cup, whisk together the eggs, butter / oil, milk, and vanilla extract.
- Preheat the waffle iron: Follow the manufacturers instructions to preheat the iron.
- Mix the dry and wet ingredients together: Gradually add the wet ingredients to the dry, whisking until just combined.
- Cook the waffles: Add just under 1 cup of batter to the ungreased waffle pan (if nonstick). Flip the waffle and cook for 4 minutes or until golden brown. Serve warm.
Notes
- If making a large batch in advance, preheat the oven to 200°F and keep cooked waffles on a wire rack in the oven until ready to serve.
- Leftover waffles can be frozen and reheated in the toaster or oven.
- The optional baking soda encourages browning.
