Ingredients
- 2 cups canned chickpeas, liquid reserved in a bowl.
- ½ cup tahini with some oil from the jar.
- 2 cloves garlic, peeled
- Juice of 1 lemon
- Salt and pepper
- 1 tbsp ground cumin
- 2 tsp of paprika
- Chopped fresh parsley for serving
Recipe
- Peel the chickpeas. Canned chickpeas can be peeled by pinching them.
- Put the chickpeas, tahini, cumin, paprika, oil, garlic, and lemon juice in a food processor. Pinch of pepper and salt, then process. Add chickpea liquid as needed to achieve smooth texture.
- Taste and adjust. Service with a drizzle of olive oil and parsley.
