Hummus

Ingredients

  • 2 cups canned chickpeas, liquid reserved in a bowl.
  • ½ cup tahini with some oil from the jar.
  • 2 cloves garlic, peeled
  • Juice of 1 lemon
  • Salt and pepper
  • 1 tbsp ground cumin
  • 2 tsp of paprika
  • Chopped fresh parsley for serving

Recipe

  • Peel the chickpeas. Canned chickpeas can be peeled by pinching them.
  • Put the chickpeas, tahini, cumin, paprika, oil, garlic, and lemon juice in a food processor. Pinch of pepper and salt, then process. Add chickpea liquid as needed to achieve smooth texture.
  • Taste and adjust. Service with a drizzle of olive oil and parsley.
